Firstly .... I just wanted to say "Hi"

Secondly, I currently use a 7216HUHI-F2 Hybrid and looking to go full IP.

I have been looking at the DS-7616NI-I2-16P and the DS-7616NI-I4-16P in the USE-IP Store
and wanted to know that, apart from the extra 2 SATA ports is there any other reason to pick one over the other ?

Not really.
As you've spotted I2 can support 2x HDDs and I4 can support 4x HDDs.
There may also be a corresponding difference in bandwidth ratings (I haven't checked).

With the newest CODECs e.g. h.265/+ you need less bandwidth (claimed up to 70% less than h.264).
HDDs are now available up to 10TB, so you probably don't need x4 of those.
